Smoked Turkey Green Goddess

Ingredients

  • 4 Perfectly Crafted Everything Buns

  • 1 turkey breast with skin, around 5 lbs

  • 2 tablespoons olive oil

  • 2 teaspoons paprika

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1 cup mayonnaise

  • 1/2 cup sour cream

  • 1/2 cup buttermilk

  • 1/2 cup basil

  • 1/2 cup parsley

  • 1/4 cup lemon juice

  • 2 tablespoon tarragon

  • 2 tablespoon chives

  • 2 cloves garlic

  • 2 tsp Worcestershire sauce

  • s/p to taste

  • 1 avocado, sliced

  • lettuce of your choice

  • 4 slices, provolone cheese

 
 

Directions

  1. Preheat oven to 375 degrees. Place turkey breast skin side up on the rack of a roasting pan, or into a lightly greased 9x13 pan.

  2. In a small bowl, stir together olive oil, paprika, salt, pepper, garlic powder, and onion powder to form a paste. Loosen the skin with your finger and spoon some of the spice mixture underneath the skin. Smooth it out to cover as much of the meat as possible. Rub the remaining spice mixture on top of the turkey breast skin.

  3. Roast in the preheated oven for approx. 20 minutes per pound, until the turkey reaches an internal temperature of 160 degrees Fahrenheit. Measure the temperature in the center of the thickest part of the breast. Actual cooking time will depend on the size of your turkey breast. Boneless turkey breasts will cook faster. Use a meat thermometer for accuracy.

  4. While the turkey breast is roasting combine basil, parsley, lemon juice, tarragon, chives, garlic and worcestershire sauce in a food processor to form a paste. Add mayonnaise, sour cream and buttermilk and pulse to combined and sauce is a light green. Add salt and pepper to taste.

  5. Once turkey breast has cooled for about 10 minutes, cut turkey into slices.

  6. Assemble sandwich by add a generous portion of green goddess on each half of the bun. Add turkey slices, lettuce, provolone and avocado.
