Blueberry Cream Cheese French Toast Roll Ups

Ingredients

  • 2 eggs

  • 1/3 cup milk

  • 2 tablespoons granulated sugar

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground clove

  • 1/4 teaspoon salt

  • 10 slices Nature’s Own soft sandwich bread

  • 1/2 cup cream cheese

  • 1 1/2 cups fresh blueberries

  • unsalted butter

 
 

Directions:

  1. Using a rolling pin or similar tool, flatten slices of Nature’s Own until thin. Remove crust from each slice, then set all slices aside. In a medium-sized bowl or deep plate, whisk milk, eggs, sugar, vanilla extract, cinnamon, clove, and salt until well combined. Set aside.

  2. To form French toast roll-ups, take one slice of bread and spread a row of cream cheese near the bottom of the slice – it should be about an inch wide. Add two to three rows of blueberries directly on top of the cream cheese, then roll slowly and carefully until blueberries are snug inside of the roll-up.

  3. After forming all the roll-ups, dip each of them into the egg mixture, ensuring all sides are covered, especially where the roll has been sealed. Heat a pat of butter, about a tablespoon, in a non-stick pan over medium-high heat. Cook roll-ups on all four sides for about a minute per side. Each side should be golden brown and slightly crisped.

  4. Once all roll-ups have been cooked, dust with powdered sugar and serve with maple syrup.
