Au Poivre Burger

Ingredients

  • 4 Perfectly Crafted Everything Buns

  • 1 1/2 lb ground beef

  • 4 slices of gruyere or Swiss

  • 8 oz package, sliced mushrooms

  • 1 tablespoon extra virgin olive oil

  • salt and pepper

  • 1/3 cup shallots, small dice

  • 2 tablespoons butter

  • 1/2 teaspoon pepper, preferably fresh

  • 3 tablespoons cognac, brandy or dry sherry

  • 1/3 cup beef stock

  • 1/2 cup cream

 
 

Directions

  1. Heat olive oil on medium and place mushrooms in pan with a pinch of salt and pepper.

  2. Adjust to medium-high heat and cook mushrooms until caramelized. Stirring occasionally. About 15 minutes.

  3. Remove mushrooms from pan and set aside. Wipe out the pan and heat to medium.

  4. Melt butter till foam subsides, add shallot, salt/pepper and cook till soft but not brown, about 5 minutes.

  5. Remove from heat and add cognac to pan. Set over medium heat and cook until cognac is mostly evaporated and spoon leaves streaks in skillet while stirring, 1–2 minutes. Add broth and cream, bring to a simmer, and cook until sauce coats spoon, about 1 minute. Season to taste with salt.

  6. Divide meat into 4 serving and form patties. Add salt and pepper with an extra amount of pepper and heat pan to medium high heat.

  7. Once the pan is good and hot place the burger patty in the pan. Let sit for about 3 to 5 minutes. Flip the burger and cook for additional 3 - 5 minutes.

  8. Add slice of cheese to each burger and cover pan. Adjusting for your temperature preference.

  9. Set burger aside and tent with tinfoil.

  10. Assemble the burger: Place patty on open everything bun bottom with mushrooms and a generous spoonful or two of au poivre sauce. Top with bun and enjoy.
