Caesar Chicken Salad

Ingredients

  • 4 slices of Nature's Own Life Whole Grain Sugar-Free

  • 2 Chicken breasts, sliced into small 1 inch cubes

  • Salt

  • Pepper

  • 1 Tomato, chopped

  • 1 Head of Romaine, chopped

  • 1/4 Grated Parmesan and extra for the mixing

  • 1/2 Cup Extra Virgin Olive Oil

  • Juice of half a lemon, about 2 Tablespoons

  • 1 Clove Garlic, minced

  • 1 Teaspoon Dijon

  • 1 Tablespoon Worchestershire Sauce

  • 1 Tablespoon of mayonnaise or 1 egg yolk

  • Recipe makes 2 sandwiches

 
 

Directions:

  • Heat olive oil in a skillet on medium-high heat until shimmering. Add chicken and salt and pepper and toss to coat in olive oil.

  • Cook until chicken is cooked through and starting to brown on the edges. Remove from heat.

  • In a mason jar or sealed cup, add Parmesan, Olive Oil, Lemon Juice, Garlic, Dijon, Worcestershire Sauce, Mayo or Egg Yolk, and salt and pepper to taste. Seal the jar and shake it till emulsified.

  • In a bowl toss, Romaine, Tomatoes, Chicken, and Dressing and add salt, pepper, and additional parmesan to taste.

  • Place salad mixture on toasted bread and enjoy.
