Falafel with a Tzatziki Sandwich

featuring Nature's Own Life Whole Grain Sugar-free Bread

Ingredients

  • 4 slices of Nature's Own Life Whole Grain Sugar-Free

  • 1 (15-ounce) can of chickpeas, rinsed and drained

  • 1 cup fresh parsley leaves, tightly-packed

  • 1 cup fresh cilantro leaves, tightly-packed

  • 1/2 cup diced red or yellow onion

  • 1/2 cup all-purpose flour

  • 1 tablespoon fresh lemon juice

  • 1 1/2 teaspoons baking powder

  • 1 teaspoon ground cumin

  • 1 teaspoon fine sea salt

  • 1/2 teaspoon black pepper

  • 3 small garlic cloves, roughly chopped

  • 6 Tablespoons of Vegetable Oil

  • Chopped lettuce, sliced red onions, sliced tomatoes, tzatziki sauce for sandwich assembly

Directions:

  • Add chickpeas, cilantro, parsley, onion, flour, lemon juice, baking powder, cumin, salt, black pepper, and garlic to a food processor. Pulse until well combined. Place in a bowl and refrigerate until you are ready to cook.

  • Place a piece of parchment or plastic wrap on a half sheet. Scoop out about two tablespoons of the mixture, roll into a ball, and place on the half sheet. Three to four falafels can be made per sandwich. Gently flatten the falafel balls to about 1/2-inch thick.

  • Heat oil in a large skillet over medium-high heat until it is shimmering. Lightly, transfer 4 or 5 falafel to the oil and fry for 2-3 minutes per side, or until both sides are browned. Transfer to a paper-towel-lined plate to drain. Repeat with the remaining falafel disks, adding extra oil to the pan if needed.

  • Assemble sandwiches immediately while falafels are warm and crispy.

  • You can freeze any leftover falafels for easy future sandwich making.
