Beet and Tomato Avocado Toast
featuring Nature's Own Life Honey Wheat Keto Bread
Ingredients
2 slices of Nature's Own Life Honey Wheat Keto Bread, toasted
2 can or jarred beets, diced
6 - 10 cherry tomatoes, sliced in half and lightly salted
1 avocado, sliced
2 eggs
Pepper
Balsamic glaze to drizzle
Directions:
Bring 3 - 4 inches of water to a rolling boil. Gently lower two eggs into the boiling water with a spoon. Boil for 6.5 minutes. Removes from heat, dump hot water and run cold water over eggs to stop the cooking process.
With a light hand, peel the eggs.
Assemble toast, start by placing avocado slices then tomatoes and beets.
Drizzle with balsamic glaze.
Top with egg and sprinkle with salt and fresh pepper to taste.
