Beet and Tomato Avocado Toast

Ingredients

  • 2 slices of Nature's Own Life Honey Wheat Keto Bread, toasted

  • 2 can or jarred beets, diced

  • 6 - 10 cherry tomatoes, sliced in half and lightly salted

  • 1 avocado, sliced

  • 2 eggs

  • Pepper

  • Balsamic glaze to drizzle

 
 

Directions:

  • Bring 3 - 4 inches of water to a rolling boil. Gently lower two eggs into the boiling water with a spoon. Boil for 6.5 minutes. Removes from heat, dump hot water and run cold water over eggs to stop the cooking process.

  • With a light hand, peel the eggs.

  • Assemble toast, start by placing avocado slices then tomatoes and beets.

  • Drizzle with balsamic glaze.

  • Top with egg and sprinkle with salt and fresh pepper to taste.
