Mushroom and Lentil Sloppy Joes
featuring our Perfectly Crafted Brioche Style Butter Rolls
Ingredients:
1 package of Nature’s Own Perfectly Crafted Brioche Style Butter Rolls
1 medium onion, chopped
1 red bell pepper, chopped
4 oz diced mushrooms
1 tablespoon olive oil
2 cloves garlic, minced
1 cup brown or green lentils
1 teaspoon chili powder
½ teaspoon cumin
1 teaspoon sweet paprika
1 (15 oz) can tomato sauce
1 tablespoon tomato paste
2 cups vegetable broth or consommé
1 tablespoon maple syrup
1 tablespoon Dijon mustard
1 teaspoon apple cider vinegar
1 teaspoon soy sauce
Salt and pepper as needed
Directions:
Heat olive oil in saucepan on medium heat.
Sauté diced onion, red bell peppers, and mushrooms till they start to brown.
Add garlic, toss and cook for 1 minute, then remove from heat.
Add all ingredients into a slow cooker and stir together.
Cover and cook for 3½ hours on high heat.
Check the mixture every hour or so and add water if needed.
Serve on Nature’s Own Perfectly Crafted Brioche Style Butter Rolls.
