Grilled Assorted Cheese, Caramelized Onions and Tomato Roll

Timing: 15 - 20 minutes; depending how brown you want your onions | Yields: 4 servings

 

Ingredients

  • 8 slices of Nature’s Own Honey Wheat bread, crust removed

  • 8 slices of cheese or a cup of grated cheese

  • 1/4 cup unsalted butter

  • 1 onion, sliced

  • 2 tablespoons olive oil

  • Salt and pepper

  • 2 tomatoes, thin sliced

 
 

Directions

  • In a large skillet, heat two tablespoons of olive oil on medium-high heat and saute onions seasoned with salt and pepper until they are caramelized (7 to 10 minutes).

  • Remove onions, set aside and clean out skillet.

  • Using a rolling pin, flatten bread squares to 1/4-inch thickness.

  • Add cheese, caramelized onions, a thin slice of tomato to 3/4 of the slice of bread. Brush the edge with water and roll up the bread around the filling; press the seam to secure.

  • Melt 2 tablespoons butter in a large skillet over medium-high heat.

  • Working in batches, add roll-ups to the skillet, cooking until all sides are golden brown and the cheese has melted, about 3-4 minutes, adding more butter as needed.

  • Serve immediately.

    Suggestions - Great for an after school snack but you can make it a meal by accompanying with some tomato soup. You can also add deli meat for a turkey and cheddar or ham and swiss roll-up.
