Falafel with a Tzatziki Sandwich
featuring Nature's Own Life Whole Grain Sugar-free Bread
Ingredients
4 slices of Nature's Own Life Whole Grain Sugar-Free
1 (15-ounce) can of chickpeas, rinsed and drained
1 cup fresh parsley leaves, tightly-packed
1 cup fresh cilantro leaves, tightly-packed
1/2 cup diced red or yellow onion
1/2 cup all-purpose flour
1 tablespoon fresh lemon juice
1 1/2 teaspoons baking powder
1 teaspoon ground cumin
1 teaspoon fine sea salt
1/2 teaspoon black pepper
3 small garlic cloves, roughly chopped
6 Tablespoons of Vegetable Oil
Chopped lettuce, sliced red onions, sliced tomatoes, tzatziki sauce for sandwich assembly
Directions:
Add chickpeas, cilantro, parsley, onion, flour, lemon juice, baking powder, cumin, salt, black pepper, and garlic to a food processor. Pulse until well combined. Place in a bowl and refrigerate until you are ready to cook.
Place a piece of parchment or plastic wrap on a half sheet. Scoop out about two tablespoons of the mixture, roll into a ball, and place on the half sheet. Three to four falafels can be made per sandwich. Gently flatten the falafel balls to about 1/2-inch thick.
Heat oil in a large skillet over medium-high heat until it is shimmering. Lightly, transfer 4 or 5 falafel to the oil and fry for 2-3 minutes per side, or until both sides are browned. Transfer to a paper-towel-lined plate to drain. Repeat with the remaining falafel disks, adding extra oil to the pan if needed.
Assemble sandwiches immediately while falafels are warm and crispy.
You can freeze any leftover falafels for easy future sandwich making.
