Stuffed Raspberry-Banana French Toast

Ingredients:

slices Nature's Own Butterbread

1/3

cup reduced-fat spreadable cream cheese

1

tablespoon packed brown sugar

1

teaspoon grated lemon peel

1/4

teaspoon ground nutmeg

1/4

cup raspberry preserves or seedless raspberry fruit spread

1

large banana

2

eggs

1/3

cup whole milk

1/8

teaspoon salt

Maple syrup (optional)

Fresh raspberries (optional)

Stir together cream cheese, brown sugar, lemon peel and nutmeg.

Spread cream cheese mixture over 4 bread slices. Stir preserves; spread evenly over cream cheese mixture.

Cut banana into thin slices. Arrange over preserves. Close sandwiches.

Beat eggs in shallow bowl. Stir in milk and salt.

Dip each sandwich into egg mixture; turn sandwich over and soak second bread slice. Repeat with remaining sandwiches.

Spray nonstick griddle or 12-inch nonstick skillet with cooking spray. Preheat over medium heat. Cook sandwiches, 3 to 4 minutes per side, or until golden brown.

Serve with maple syrup and garnish with raspberries, if desired.
